Some of them are incredible, though we haven\u2019t yet got to the point of following the same recipes &#8211; just experimenting and enjoying the results! <\/p>\n<p>My first advice with chilli sauce is as the same for most things: just give it a go! You will find that as you experiment you will soon figure out what works and what doesn\u2019t and what you like and don\u2019t. <\/p>\n<p><b>1) Base<\/b><\/p>\n<p>For starters, we either used onion or tomato as a base to the sauce. <\/p>\n<p><b>2) Chillis <\/b><\/p>\n<p>This determines the heat &#8211; the hotter the chilli, the hotter the sauce, but you want to make sure you have a good quantity to get the flavour. <\/p>\n<p><b>3) Vinegar<\/b><\/p>\n<p>Most sauces use a fair amount of vinegar &#8211; the type will have a huge bearing on the flavour. White, Dark, Malt, Kombucha, White Wine, Apple Cider, Balsamic &#8211; choices choices! <\/p>\n<p><b>4) Other stuff<\/b><\/p>\n<p>Salt, Sugar, Spices &#8211; the variety is limitless! <\/p>\n<p><\/p>\n<p>As an alcoholic I used to use a spreadsheet for brewing alcohol. I have adapted this for Kombucha, Chilli sauces and other recipe attempts. If you would like to try this, let us know. <\/p>\n<p>A simple spreadsheet can help you work out what flavours work and what doesn\u2019t. You can try two batches the same but adjust one ingredient and record the results. Very quickly you will refine the recipe to what you like and the adjustments get smaller and smaller until you think it\u2019s perfect. Then you just adjust for the quantity. <\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/203.170.86.202\/wildeden.com.au\/news\/wp-content\/uploads\/2020\/01\/6BDF1ABB-44BE-410C-A8FB-D5199AC8564C.png?resize=551%2C413\" data-mce-src=\"6BDF1ABB-44BE-410C-A8FB-D5199AC8564C.png\" title=\"\" width=\"551\" height=\"413\" style=\"display: block; float: none; margin: 5px auto; max-height: none; max-width: 100%;\" data-mce-style=\"display: block; float: none; margin: 5px auto;\" data-position=\"1\" class=\"center\"><\/p>\n<p><br data-mce-bogus=\"1\"><\/p>\n<p><u><b>Starter recipe (Tomato Base)<\/b><\/u><\/p>\n<ul>\n<li>100ml Vinegar (we use our own Kombucha vinegar)<\/li>\n<li>100ml Tomato puree or tomatoes<\/li>\n<li>\u00bd onion <\/li>\n<li>10 large chillies (we used Naga Monster)<\/li>\n<li>1 tsp paprika<\/li>\n<li>\u00bd &#8211; 1 tsp salt <\/li>\n<li>\u00bd tsp Bragg Sea Kelp<\/li>\n<li>\u00bc tsp ginger powder<\/li>\n<\/ul>\n<p>If using white or wine vinegar you may find it too bitter so some honey, apple concentrate or sugar may be what you like. Be aware that sugar decreases the heat intensity. <\/p>\n<p>Options (try one at a time)<\/p>\n<ul>\n<li>Dash Worcestershire sauce  <\/li>\n<li>Dash Fish Sauce <\/li>\n<li>Dash Soy Sauce<\/li>\n<li>Spring Onions<\/li>\n<li>Garlic <\/li>\n<li>Spices (i.e. Tumeric, Mixed, Cardamon, Cloves, Nutmeg, Cinnamon)<\/li>\n<li>Substitute the tomato for 2 onions for totally different flavour &#8211; but will likely need to add more paprika or similar. <\/li>\n<\/ul>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/203.170.86.202\/wildeden.com.au\/news\/wp-content\/uploads\/2020\/01\/UNADJUSTEDNONRAW_thumb_4343.jpg?resize=581%2C435\" data-mce-src=\"UNADJUSTEDNONRAW_thumb_4343.jpg\" title=\"\" width=\"581\" height=\"435\" style=\"display: block; float: none; margin: 5px auto; max-height: none; max-width: 100%;\" data-mce-style=\"display: block; float: none; margin: 5px auto;\" data-position=\"1\" class=\"center\"><br data-mce-bogus=\"1\"><\/p>\n<p>We put in the Thermomix for about 15 minutes on less than 80\u00ba after blending. If you would like it thicker consistency, this will need to be adjusted. <\/p>\n<p>Make sure you let it cool to make sure the glass bottles don\u2019t break from the heat &#8211; or gentled heat the bottle beforehand. Fast changes in temperature can crack glass. Use a funnel to decant. <\/p>\n<p>The below two sauces were our last attempt: the left is a tomato base, the right hand one is onion base, with a <i>lot<\/i> of extra spices! <\/p>\n<p style=\"margin-bottom: 0px;\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" src=\"https:\/\/i0.wp.com\/203.170.86.202\/wildeden.com.au\/news\/wp-content\/uploads\/2020\/01\/UNADJUSTEDNONRAW_thumb_432e-1.jpg?resize=556%2C741\" data-mce-src=\"UNADJUSTEDNONRAW_thumb_432e.jpg\" title=\"\" width=\"556\" height=\"741\" style=\"display: block; float: none; margin: 5px auto; max-height: none; max-width: 100%;\" data-mce-style=\"display: block; float: none; margin: 5px auto;\" data-position=\"1\" class=\"center\"><br data-mce-bogus=\"1\"><\/p>\n<p>Previously, we have made yellow sauces with yellow chillies, apple concentrate and turmeric. INCREDIBLE! <\/p>\n<p>All the children have tried their own at various times &#8211; and all were so tasty &#8211; (and stinking hot ??). One night, at around 10pm, 3 of us staggered out of a caravan in shorts &amp; no shirts. It was 1\u00baC outside but we had been in a confined space with three batches on the boil for hours.
